An easy salmon dish that can be marinated in as little as 30 minutes and tastes amazing! I have this salmon as a main dish with veggies, quinoa or rice. Leftovers are great for a non-traditional breakfast with added veggies or put into an omelette. Or for lunch added to a salad with avocados and seeds. Lots of versatility that it will become an easy go-to in your kitchen.
Ginger – Lime Salmon
Ingredients:
1 fillet of salmon (1-2 pounds – wild caught is best)
½ cup tamari or soy sauce
1 lime squeezed
2 tbsp maple syrup
1 tsp ginger grated
3 cloves of garlic minced
Directions:
- Mix tamari, lime juice, maple syrup, ginger and garlic in dish that you’re going to bake salmon in
- Rinse salmon in water then pat dry and place skin side up in baking dish
- Place in fridge covered for 30 mins to 2 hours to marinade
- Preheat oven to 400*F, flip the salmon over so skin side is down and spoon marinade all over the salmon
- Bake for 15 to 25 minutes (good rule of thumb is 10 minutes per inch of thickness of the salmon – I also look for if it starts to go white on top then take out immediately)
Veggie inspiration to go with:
Asparagus, green beans, broccoli, roasted vegetables such as sweet potatoe, yams, beets and/or squash – but the possibilities are endless would go great with a salad as well. Basically whatever you have in your fridge!
