This is a delicious sauce to have with rice, on a buddha bowl, with cooked veggies or with pasta. Super yummy and adds extra healthy calories, plant-based protein and healthy fats to any dish.  This recipe is a bigger batch so you will have lots of left overs to freeze saving you time for future meals!

 

Curry Peanut Sauce

Ingredients: 

2 – 3 tablespoons coconut oil 

1 yellow onion 

1 – 2 tablespoons chopped garlic (approx 12 cloves) 

2 teaspoons grated ginger 

1 – 1 ½ tsp cumin 

1 ½ tsp coriander 

2 tablespoons curry powder 

1 ½ cup natural peanut butter 

1 ½ cup water 

6 tablespoons tamari 

2 tablespoons brown rice vinegar 

 

Directions: 

  1.  Heat coconut oil on medium heat 
  2. Add onion, garlic, ginger and spices 
  3. Saute until onion is translucent, stirring often 
  4. Next add the brown rice vinegar, tamari, peanut butter and water 
  5. Stir all together and heat through for 5-7 mins 
  6. When cooled add sauce to blender and blend until smooth
