This is a delicious sauce to have with rice, on a buddha bowl, with cooked veggies or with pasta. Super yummy and adds extra healthy calories, plant-based protein and healthy fats to any dish. This recipe is a bigger batch so you will have lots of left overs to freeze saving you time for future meals!
Curry Peanut Sauce
Ingredients:
2 – 3 tablespoons coconut oil
1 yellow onion
1 – 2 tablespoons chopped garlic (approx 12 cloves)
2 teaspoons grated ginger
1 – 1 ½ tsp cumin
1 ½ tsp coriander
2 tablespoons curry powder
1 ½ cup natural peanut butter
1 ½ cup water
6 tablespoons tamari
2 tablespoons brown rice vinegar
Directions:
- Heat coconut oil on medium heat
- Add onion, garlic, ginger and spices
- Saute until onion is translucent, stirring often
- Next add the brown rice vinegar, tamari, peanut butter and water
- Stir all together and heat through for 5-7 mins
- When cooled add sauce to blender and blend until smooth
