Have you tried nice cream?! It’s basically like ice cream but it’s “nice to your body” and is actually healthy for you. Fruit based and dairy free; skipping the added sugars, artificial flavours, preservatives and colours of traditional ice cream. This recipe is ridiculously easy to make with only 2 ingredients and insanely good. It’s a magical, dairy free, soft serve that will sure to be a hit in your kitchen too!

 

This recipe was actually inspired by an episode of Daniel Tiger and yes you read that right – it’s a kids show. In the episode Daniel Tiger’s mom freezes bananas for their dessert and makes banana swirl. My son Presley was so excited when he saw this that I decided to try it and see if it was as good in real life as Daniel Tiger said it was. And it was!

 

I added cashew butter to level up on the creaminess like real ice cream as well as the added protein, healthy fats and good calories. Another benefit of the cashew butter is it helps balance blood sugar as bananas are a healthy source of sugar (much better than white sugar) but are still naturally high so it helps to keep blood sugar levels in check.  It also makes it more filling and satisfying.

 

This has been my son’s favourite since he was little and now has become a dessert hit for everyone. It’s healthy, super easy to make and absolutely delicious!

 

Here’s the recipe for Banana Swirl or as my son calls it Banana Squirrel 🙂

 

Banana Swirl “Nice Cream”:

Ingredients: 

4 frozen bananas

2 tbsp cashew butter

 

Can add 1-2 tsp of water if needed for desired consistency,

 

Note: I recommend using a high powered blender like a Blendtech or Vitamix as the average blender will have a difficult time turning the frozen bananas into an ice cream consistency. It will work but you will have to be patient and continually scrape down the edges of blender and blend multiple times. Patience is key but it’s worth it.

 

Directions: 

  1. Slice bananas and put into a Ziploc bag to freeze overnight
  2. Add the banana and cashew butter in blender and blend
  3. Add water if needed to reach the desired consistency
